Ramps-Spring is here!
Ramps are one of the first harbingers of spring. They are cross between garlic and an onion but you can eat the bulb and the the leaves. They are high in vitamin A and C and high in fiber. There are many ways to prepare ramps-saute in olive oil with a little salt and pepper(my favorite way), make pesto, put in soups and stews, pickled and so much more.
